If you are following Charlotte's directions, you should be fine without testing strips, because she has tested. 1000mL is pretty close to a quart. In the US, quite a few jars are marked as 1000mL - It's an issue for the US because we're not really on the mL measuring system, but since many foods are both national and international, they tend to be marked both ways. Glass Measuring containers *and some plastic ones) do come in mLs, though. Just be sure you get one that's a quart or 4 cups, and there should be mL marks there. So, yes, you leave that 100mL space at the top. The gas needs to come out of the mix and go down into the water - so you don't want any part of the shot glass or lid you're using for the shot glass equivalent to be touching the lid.

Blanket around bottle will be fine - or just put it in a styrofoam cooler, that might help, too.
